Serious question: what do normal people do on the weekend? When we don't have plans, we play/experiment/make a huge mess in the kitchen. So far bread and spicy pickled veggies for an army. I would just like to report that home made organic soya milk, just beans and water, makes lovely delicious thick kefir and the kefir grains look lovely plump and healthy too! Suspect they bacteria need the full range of amino acids to make the enzymes to make the kefiran. In #tbt fashion, I figured I would share my first ever food post. Back when I used to post food science content on my personal IG. So let’s talk about Salt 🧂A marriage between sodium and chloride. Where it’s key role for cooking is the ability to amplify your foods flavor. Sea Salt, Kosher Salt and Pink Himalayan Salt are just a few of the options available for us to explore. But what makes them different? Kosher Salt has lighter and smaller crystals than sea salt, allowing for an ease of application during cooking and is generally less expensive and great for every day use. Pink Himalayan Salt has large crystals and is pink in color due mineral impurities like the presence of iron oxide. It is extracted from Khewra Salt Mine in Pakistan, near the Himalayas. Sea Salt is obtained through the evaporation of seawater which allows for a larger crystal formation. The unique quality of sea salt is not it’s flavor but the delightful texture it can give a dish. Their different shapes and sizes play a key role in your cooking. Where smaller and denser salt crystals, like table salt will be much saltier than larger one like Sea Salt. So when replicating a recipe do not make 1-1 replacements when it comes to salt because they are indeed not created equal. .Research has shown that one salt is not healthier than the others. Some claim that Pink Himalayan Salt is healthier because it is “natural” and contains less sodium, when in reality the sodium content difference between granulated salt and Pink Himalayan salt is not significant enough to say that one will provide less sodium to your diet than the other. So instead choose your salts according to your cooking application and keep your sodium consumption below 2,300 mg of day as recommended by the The American Heart Association. Salts are unique in their own ways and using them to your advantage will enhance the flavor of your dishes, add a nice crunch to your caramel salted cookies or make you feel like a badass chef using a salt block to cook your steak. Using more salt is not necessarily the key to a good dish, but using them better and smarter. #forksncoats #throwbackthursday

Accidental discovery / fun fact of the day: If you sprinkle this shiso salt on your egg whites, they’ll turn greenish blue! The vibrant purple color of this species of perilla comes from anthocyanin pigments, which are also found in red cabbage. 100% apple ferment liquid leavened bread. Crikey, that turned out well. Just a mini with 200g of flour and no added yeast. Overnight rise. 2hour prove. Completely forgotten for 1.5 hours in the oven. And still it loves me. I obviously tried to use the ferment for the first loaf too soon and now the ferment is still bubbling over a week later..#experiments #kitchenscience #realbread #ferment #wildyeasts #exploring #naturalfood
