So what types of syrups are there? Someone recently asked us via dm on how to make a infused simple syrup and although we’ve mentioned it before we love to help out and discuss syrups again. We’ve found and easy how to vid on @how2drink YouTube vid and it is that simple. But what kind of syrups are your go tos? 1. Simple syrup - equal parts sugar and water.2. Rich simple syrup - 2 parts sugar 1 part water.3. Brown syrup - equal parts brown sugar and water. Brown sugar is made by adding molasses to refined sugar.4. Demerara syrup - equal parts Demerara sugar and water. Demerara sugar is crystallized sugar that’s was never crystallized into white sugar.5. Cane syrup - equal parts cane sugar and water. Can sugar is unrefined sugar that has been concentrated but not crystallized. (Note that 3/4/5 have a more caramel note to it)6. Maple syrup is roughly 67% sugar by weight, comparable to rich simple syrup.7. Agave nectar is usually around 75% sugar by weight and consists of mostly fructose. To make a syrup use the ratio 1 part water to 2 parts agave nectar. 8. Honey is roughly 82% sugar and is very very thick. To make syrup add 0,64 part water to 1 part honey. 9. Infused syrup - basically a simple simple (but could also be one of the other sweeteners) but infused with a flavor. A good example would be an orgeat or a raspberry syrup. We’ve love it due to the combo an infused ginger simple syrup and a smoked demarcation syrup. To make the ginger syrup, combine equal parts ginger juice and cane sugar. Here is my regional qualifying cocktail from the 2019 @woodfordreserve manhattan experience “TomFoolery” 🎳🎳🎳🎳.For this competition I was tasked with creating my ideal manhattan recipe. I used a combination of Woodford Reserve Double Oaked Bourbon, *De-oaked Amontillado Sherry, Burnt Sugar, saline and a blend of @bittercube Corazon and Bolivar bitters. My recipe was based off the concept of perfect manhattans which led me to want to enhance the flavor of spice and oak found in the bourbon. I ended up using sherry vs a blend of sweet and dry vermouth. Which really let the bourbon shine. Well since it’s both #oldfashionedweek and #sherryweek I figured I might as well fix myself a little tipple and kill two hashtags with one post while I’m at it!🥃To be completely honest, there’s nothing truly unique or significant about this old fashioned, but at the same time it represents a huge improvement in not only my technique, but also my understanding of (home) bar tending in general and that’s all thanks to my recent dive into Dave Arnold’s wonderful book, Liquid Intelligence.🥃I was of course first intrigued by the books presentation of over-the-top uses of technology in ways that I will most likely never get to try for myself. But within the first few pages I also realized that underneath all of the gratuitous research, there were so many beautifully helpful tips and tricks that even the most casual cocktail enthusiast can use to improve their craft. This old fashioned is a perfect example of those fine tuning adjustments that I’ve learned to make while reading this book. Everything from how I froze and cut the ice, to the slight change in the way I measure ingredients, to what order I pour them in the glass was actually very simple, but purposefully intentional all thanks to Liquid Intelligence.🥃Seriously It’s Just An Old Fashioned2oz @redbreastirishwhiskey 12 year3/8oz simple syrup2 dashes of @angosturaaromaticbitters -Spin a large clear ice cube into a double old fashioned glass. Dash in bitters followed by whiskey and syrup. Stir briskly. Ruined Heritage! Last week, In the search for a damn near perfect Gimlet. I ended up on @jeffmorgen website once again! (Scroll to see his gimlet recipe and the cordial in the making! It is truly fantastic!) Taking his advice and blending some malic and citric acids with fresh lime juice and sugar to create a super sexy homemade cordial led me on a scienc-ey tangent. What you see in the first picture is the outcome Similar to a gimlet in the fact it is simple, elegant and beautiful. It also only contains two ingredients. Ruined Heritage is its name, because it simply is just that. An home made tangy orange cordial and Swapping the gin for Tequila Making the cordial was slightly more difficult as the oranges I used were very sweet and getting the balance was a task in itself. But with the help from a book by Dave Arnold #liquidintelligence Making an orange lime acid. Then tweaking the ratios and adding sugar. I am VERY happy with the outcome! Winter warmer Its getting colder by the day! 50ml citrus forward gin 20ml orange lime acid (from Dave Arnold's book #liquidintelligence20ml muscavado cinnamon syrup (Boil cinnamon sticks in 400ml water, take off the heat. Add 50 grams muscavado sugar 350 grams cane sugar, stir to dissolve and infuse until cold!)
