Cooking good food is often considered an art; ingredients and methods can be substituted or revised as the cook’s tastes vary. I’ve been lucky, I’ve had some awesome opportunities to learn while I’ve been in charge of the takeover! Today I went to the annual Adolph E Waller lecture, where Dr. Pamela Ronald was speaking. You may recognize her name from her popular TED talk or her book she wrote with her husband. Today was the public (aka lay terms) lecture, and she gave a fantastic presentation on plant genetics, its potential to help the food system, and its past successes in that same area. She talked quite a bit about GMOs. Most of the audience was grad students or faculty in the sciences, so most (if not all) of us were already in her side. It was great to hear her explain things how she would to a non-scientist. She is a fantastic science communicator! #scicomm #sciencecommunication #osu #buckeye #CFAES #factsnotfear #agvocate #science #eatyourscience #foodnerd #citationneeded #needtocite

Hi everyone, my name is Mallory and I’ll be taking over the CN Instagram for this month! If you’ve been a follower for awhile, you may recognize me from a summer spotlight this summer, or from my takeover last year. For anyone new and for a refresher - my research involves investigating the absorption and metabolism of a specific class of compounds in tomatoes called steroidal glycoalkaloids. This group of chemicals is unique to tomatoes, and we don’t know much about them yet, but they may be beneficial to health. If you have some chemistry background, can you get an idea for the structure of these molecules based on their name?.Aside from science, I like coffee (obviously), reading, plants, and beer. And doing all of these things with friends, too! Follow along this month as I talk more about my research and other science that I think is cool. .#food #foodscience #sciencecommunication #scicomm #osu #buckeye #foodie #cbus #iamscicomm #CFAES #factsnotfear #agvocate #science #nutrition #nutritionscience #eatyourscience #foodnerd #instaresearch #citationneeded #needtocite

tinyvalleygardens @reallife.theperfecthousewife It's delicious, too! They also had purple or orange cauliflower & I'm sorry I didn't get a pic of those varieties.

reallife.theperfecthousewife @tinyvalleygardens wow, can you imagine a table with all the varieties. No problem 💕 I’ll google it, sounds very interesting 😍

The article in first picture talks about how Mums visiting a particular dairy farm only asked if the milk being produced is ethical or not. Their concern arises from the fact that calves are kept away from their mothers right after 6 hours of birth. So is this unethical? Are we depriving the calves "mother's love" for our selfish needs? Are we keeping them starved to be fulfilled on our end? Apparently not! The second picture is from the Waterman Dairy farm. Fact 1 : Calves need Colostrum from mother's milk but the immunoglobulins absorption in calves reduce as days pass. So after around 2-3 days Colostrum is of no use for them. Fact 2 : If calves feed directly from their mother they are susceptible to infections originating from the udder. #food #foodscience #sciencecommunication #scicomm #osu #buckeye #foodie #cbus #iamscicomm #CFAES #factsnotfear #agvocate #science #nutrition #nutritionscience #eatyourscience #foodnerd #instaresearch #citationneeded #needtocite

No better way to celebrate the return of Good Eats than with a recipe from the man himself. Chuan'r (from Everydaycook), Tahini Black Rice, Shisitos, and Tomato Salad. Shared the experience with none other than the friend that went to see Alton Brown live, Eat Your Science, with me. We did good. This is food TV. #goodeats #thereturn #itsback #eatyourscience @altonbrown @yasuhero15

If you have multiple children of various ages, this activity hits the sweet spot (and a sweet tooth). This chart shows the phases of the moon and is laminated for drawing each phase and for repeated use. And let's be serious, using Oreos to learn science is something that pretty much anyone can get on board with!⁣⁣Challenge: Get through this activity without eating all the cookies! ⁣⁣🌑🌒🌓🌔🌕🌖🌗🌘⁣⁣⁣⁣#eatyourscience #subscriptionboxaddict #kidssubscriptionbox #kidsmasks #kidstoys #pretendplay #playbasedlearning #preschoolactivities #kindergartenready #letthembelittle #letkidsbekids #subscriptionbox #learningthroughplay #playpretend #felttoys #toysforkids #learningtoys #earlylearning #preschoolplay #counting #igkids #toddlerhood #childhoodunplugged #childhood #handmadetoys #handmadetoysforkids #imaginativeplay⁣⁣⁣#reusabletoys #buildengagement #supportsmallbusiness

Now THIS is some next level Slow Food! 5000 years in the making... 🍞🥐🥖..Reposted from @dr.chans - You're gonna love this story! Seamus Blackley, co-inventor of Xbox games, amateur Egyptologist & ardent hobby baker, teamed up with archaeologist Dr Serena Love & microbiologist Richard Bowman to recreate this ancient loaf!⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀Dormant yeast was carefully extracted from 5000 year old Egyptian ceramic pots. Seamus then cultivated the yeast using ancient grains he milled himself (barley & einkorn, first domesticated 10,000 years ago). Then he baked this bread! Crumbly, more cake like (less gluten than modern wheat), it has a sweet caramel aroma⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀From the BBC: "While this culture was sleeping, modern wheat was invented," Mr Blackley explains. The oldest of the pyramids at Giza was built about 4,500 years ago - by that time, these yeast strains were already about 700 years old. "It smelled very different from modern starters," he says. "The bubbles were smaller: less pungent, but more active."⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀This bread was baked in a conventional oven, but Seamus is working with Dr. Love and ceramicists to recreate ancient Egyptian-style pots & start baking in them⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀Meanwhile, Mr Bowman will collect yeast samples from the Old, Middle & New Kingdoms, each separated by 500 to 700 years. More baking will follow, whilst the genomes will be sequenced in order to track "genetic drift" across the centuries⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀Nothing cooler than this! #eatyourscience @katehowell3010 can't wait for your experiments with Australian ancient grains.. can we get an archaeologist on board??⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀Pic by Seamus Blackley⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀.⠀⠀⠀⠀⠀⠀⠀⠀⠀#fermentation #ferments #wildferment #archaeology #egypt #bread #baking #artisan #yeast #sourdough #fermented #research #science #ancientgrains #slowgrains #barley #einkorn #microbiology #nerdalert #food #nutrition #genetics #genomics - #regrann
